The undisputed king is the cocido lebaniego. Unlike the mountain stew (typical of the rest of Cantabria which has beans), the Lebaniegan is prepared with small chickpeas grown in the area, cabbage, and compango (chorizo, blood sausage, bacon, ham bone, and stuffing).
